For some odd reason I wanted pancakes yesterday morning- pancakes with chocolate chips and bananas. I have NEVER had pancakes with anything in them except blueberries. So, I rummaged around on the internet, found a recipe and tweaked it a little. Voila! Banana and chocolate chip pancakes. And oh.my.word they were DELISH!
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup milk
- 3 tablespoons butter, melted
- 2 eggs
- 1 tablespoon white sugar
- 1 teaspoon vanilla extract
- 1 large banana, diced
- 1/2 cup miniature (or regular) semisweet chocolate chips
- 1/4 cup chopped walnuts
- cooking spray
Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
Serve with chocolate chips, bananas and powdered sugar, or simply with syrup. Enjoy!
These pancakes are AWESOME! I substituted oil for the butter and whole wheat flour for some of the white flour and served with just powdered sugar on top... YUMMY!!! Thanks for the great recipe!
