Fall is here - what better time to have some yummy pumpkin bars. These pumpkin bars are fabulous - moist, pumpkin-y and quite tasty. Yum!

Pumpkin Bars
Bars:
4 eggs
1-2/3 cups white sugar
1 cup vegetable oil (or you can substitute applesauce)
1-15oz. can pumpkin puree
2 cups all purpose flour
2 tsp. baking powder
1 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. salt
Frosting:
1-3oz. pkg. cream cheese, softened
1/2 cup butter, softened
1 tsp. vanilla extract
2 cups confectioner's sugar, sifted

Preheat oven to 350 degrees.

In a medium bowl, mix the eggs, sugar, oil (or applesauce) and pumpkin with an electric mixer until light and fluffy. Sift together the flour, baking powder, baking soda, cinnamon and salt. Stir into the pumpkin mixture until thoroughly combined.

Spread the batter evenly into an ungreased 10x15 inch jellyroll pan. Bake for 25-30 minutes in preheated oven. Cool before frosting.

To make frosting, cream together the cream cheese and butter. Stir in vanilla. Add confectioner's sugar a little at a time, beating until mixture is smooth. Spread evenly on top of cooled bars. Cut into squares. Store in an airtight container.

*I've also used fresh pumpkin puree for this and added pumpkin pie spice to taste.
