This toffee recipe is from a dear friend and is super simple to make. I'm thinking I might whip some up later today :) This would be a great snack for a Christmas eve or Christmas day get together, or put some in a nice container and give as a last-minute gift!

Chocolate Toffee

2 sticks butter
1 cup brown sugar
Enough saltine crackers to line the bottom of a 9"x13" baking dish (flat, side by side)

1-12 oz. bag semisweet chocolate chips

Preheat oven to 350 degrees F. Melt butter in a medium saucepan and add brown sugar. Bring to a rolling boil and boil for 3 minutes, constantly stirring (so the butter is all mixed in and doesn't separate out from the brown sugar - I've messed this part up many times). Line the bottom of the 9" x 13" baking dish with the saltine crackers. Pour the boiling butter and brown sugar mix over the crackers. Bake for 15 minutes. Immediately after removing from oven, pour the bag of chocolate chips over the mixture and distribute evenly. Use a spatula to smooth out chocolate evenly as it melts. Put in the refrigerator for 30-45 minutes. Break into pieces and serve. Store leftovers in airtight container.

I have had this recipe for years but had forgotten all about it. Now I have something to take to church tonight for the fellowship after Christmas caroling! (after lurking about I've finally decided to subscribe to your blog... love the vintage stuff!!)
