Super late recipe post today... but just in time for a midnight snack maybe? :)
1-12 oz. pkg. vanilla wafers
2-8 oz. pkgs. cream cheese
¾ cup white sugar
1 tsp. vanilla extract
1-21 oz. can cherry pie filling
Preheat oven to 350 degrees F. Line a muffin pan with paper liners. Crush vanilla wafers and distribute evenly into each muffin cup. In a mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy. Fill each paper cup with this mixture, almost to the top.
Bake for 15 minutes. Cool. Top each with cherry pie filling. Enjoy!
