Recipe Day Wednesday!

Good morning! Monday's five faves had to do with the theme of strawberries and lemonade, so in keeping with that theme, here are two fabulous recipes- one for homemade lemonade and one for a fresh strawberry dessert that my husband and I made last night (we cut the recipe in half since it was just the two of us).

Oat-Fashioned Strawberry Dessert (from Taste of Home's Prize Winning Recipes)
4 cups sliced fresh strawberries
1-1/4 cups flour
1-1/4 cups quick-cooking oats
2/3 cup packed brown sugar
1/4 tsp. baking soda
1/8 tsp. salt
2/3 cup cold butter
2 Tbsp. sugar
1/4 to 1/2 tsp. ground cinnamon

Drain strawberries on paper towels; set aside. In a large bowl, combine flour, oars, brown sugar, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. Reserve 1-1/2 cups for topping. Pat remaining crumb mixture into a greased 9-in. square baking pan.

In a bowl, combine sugar and cinnamon; stir in strawberries. Spoon over the prepared crust. Sprinkle with the reserved crumb mixture. Bake at 350 degrees for 35-40 minutes or until golden brown. Serve warm. Optional: Serve with a scoop of vanilla ice cream. Yield: 9 servings

Best Lemonade Ever (from allrecipes.com)
1-3/4 cups white sugar
8 cups water
1-1/2 cups lemon juice

In a small saucepan, combine sugar and 1 cup water. Bring to boil and stir to dissolve sugar. Allow to cool to room temperature, then cover and refrigerate until chilled.

Remove seeds from lemon juice, but leave pulp. In pitcher, stir together chilled syrup, lemon juice and remaining 7 cups water.

Enjoy!
