4th of July Weekend

Happy 4th of July this weekend! We are heading over to Hillsborough, NC this afternoon to visit with my husband's parents, his sister and her husband, and our niece. It'll be a great time of hanging out, swimming, and eating! I'm making an apple cake for dessert - it is SO wonderfully good. Not good for you, but absolutely scrumptious (it's a holiday so it's allowed, right? ;)). I made it for the first time a couple weeks ago when we traveled over there and we all about fell off our seats it was so good. I wish I could take props for the recipe, but I cant. I found it in a recipe book. :)

Here it is in case you want to get your daily sugar allowance for the next month or so :)
Fresh Apple Cake by Mary Saunders
Cake:
4 cups thinly sliced apples
2 cups sugar
2 cups flour
1-1/2 tsp. cinnamon
1 tsp. salt
2 eggs
3/4 cup cooking oil
1 tsp. vanilla
1 cup chopped nuts
Sauce:
1 cup sugar
8 Tbsp. butter
1/2 cup cream or evaporated milk
1 tsp. vanilla

To prepare cake batter stir together apples and sugar in a large bowl. Add dry ingredients and stir well. In a separate bowl beat eggs, oil and vanilla. Stir this mixture into the apple mixture. Blend until thoroughly moistened. Fold in nuts. Pour into well-greased 9x13 dish or pan.Bake at 350 degrees for 50 minutes or until toothpick inserted in center comes out clean.

To prepare sauce put all ingredients into a saucepan and bring to a boil over medium-high heat, stirring constantly. Cook for 3 minutes.

Serve warm sauce over fresh apple cake. Add a scoop of vanilla ice cream if desired.
