Recipe Wednesday

I needed a quick roll recipe the other evening for dinner, and while these rolls are not quick-quick (about 45 minutes rising time, plus baking time), they are fabulous.

Quick Dinner Rolls
1 pkg. active dry yeast
1 cup warm water
2 Tbsp. sugar
2 Tbsp. shortening
1 tsp. salt
1 egg
2-1/4 cups flour

Dissolve yeast in water. Add sugar, shortening and salt. Add half of flour and egg and stir. Add rest of flour and stir well. Cover and let rise for 30 minutes. Stir down and spoon into greased 12 muffin tin (the dough is VERY sticky and wouldn't really spoon, so I had to pretty much use my hands to get the dough into the muffin tin). Let rise in a warm place for 15 minutes. Bake at 350 degrees for 15 minutes or until golden brown. Serve with butter, if desired. Makes 12 rolls.
