Hot Asparagus Bacon Salad
7 bacon strips
1 lb. fresh asparagus, trimmed
1/3 cup vinegar
1 Tbsp. sugar
1/2 tsp. ground mustard
1/4 tsp. pepper
4 cups salad greens
1/2 cup sliced almonds
2 hardboiled eggs, sliced

In a skillet, cook bacon until crisp. Drain on paper towel. Reserve 2-3 Tbsp. bacon drippings.

Cut asparagus into 1.5" piece; sautee in drippings until crisp-tender.

Add vinegar, sugar, mustard, pepper and bacon. Cook and stir for 1-2 minutes. In a large bowl, combine the salad greens and almonds. Add the asparagus mixture and toss gently.

Top with egg slices. Serve immediately.

  1. This is great. I've run out of ways to cook asparagus. I'll give this recipe a try.
