Recipe Day Wednesday!

We had some cold weather and severe thunderstorms roll in yesterday in the very early hours of the morning that lasted almost all day. I rearranged my weekly menu to have Broccoli Cheddar Soup-- it just felt like a soup day- cold and rainy! I know it's summertime, but this soup is delish! Pair it with Popovers and some fresh fruit and - Yum!

Broccoli Cheddar Soup (from Favorite Recipes from Quilters)
1 small onion, chopped
2 Tbsp. butter
3 Tbsp. flour
2 cups milk
2 chicken bouillon cubes
1-1/2 cups boiling water
2 cups shredded cheddar cheese
1/2 tsp. salt
1/2 tsp. thyme
1 Tbsp. garlic salt
Dash pepper
1 cup cooked, chopped broccoli

In a large saucepan or pot, saute onion in butter until tender. Stir in flour and heat until bubbly. Gradually add milk and heat slowly, stirring constantly.

Dissolve bouillon cubes in boiling water. Add to white sauce with cheese, salt, thyme, garlic salt and pepper and heat through.

Stir in cooked broccoli and serve. Yield: 4-6 servings
