Banana Cream Pie
1/4 cup sugar
3 Tbsp. cornstarch
1-½ cups milk
2 egg yolks
1 Tbsp. butter
½ tsp. vanilla extract
2 bananas
9 inch pie crust, baked
Preheat oven to 400 degrees F. Combine sugar and cornstarch in a double boiler; add milk. Heat until mixture thickens, stirring constantly. Remove from heat. Mix in egg yolks slowly, return to heat, and stir until thickened. Stir in butter and vanilla; remove from heat. Set aside to cool. Layer banana slices over the bottom of the pie crust. Pour sugar mixture on top. Bake until golden - about 10 minutes. Cool on a wire rack.
